docs(helm): add podMutatorWebhookConfig to readme, update its description in values.yaml

Issue

No issue, just documentation. This is my first PR ever in this project, so I apologise in advance if I am skipping any part of the PR process and look forward for advice on how to comply.

Description

podMutatorWebhookConfig.failurePolicy was not included in README.md and its description in values.yaml mentioned pod mutation instead of service mutation.
