Add canonical tests to list-ops

This PR touches files which potentially affect the outcome of the tests of an exercise. This will cause all students' solutions to affected exercises to be re-tested. If this PR does not affect the result of the test (or, for example, adds an edge case that is not worth rerunning all tests for), please add the following to the merge-commit message which will stops student's tests from re-running. As a tiny nit, operation? looks like a function that tells you if its argument is an operation. The Racket Reference calls this parameter pred.

l was focusing on the tests, but yeah, that’s awkwardly written so I’ll tweak the stub.

Closes #418 by removing the offending tests and adding the canonical tests from the problem-specs repo.
This will break existing solutions because previously students implemented
my-foldbut now we're asking formy-foldlandmy-foldrinstead.
