Umlauts (ä,ö,ü,ß) not working in LaTeX

Good Evening,

When i try to use an Umlaut (ä, ö, ü, ß) from the German Language, the moment Neovim tries to expand the Snippet it crashes.
I believe it has to do something with the Regex, but im not sure (newbie here, sorry).

If anyone has an Idea of how to fix this, please let me know

I would presume this is an issue with the snippet engine being used and not directly the "templates" this project provides but we can't rule this out yet. @kaesekarl could you provide an example of where this happens (i.e. snippet/language used?)
