ggcr: docker v29.0.0 breaking changes

With v29.0.0 release of docker they deprecated the github.com/docker/docker module and moved to github.com/moby/moby/client and github.com/moby/moby/api. Part of this included breaking changes the effect the Client in pkg/v1/daemon, similar to #2072.

I was unfamiliar with #2072! I'm surprised I didn't run into it while updating our dependencies, though it seems they reversed some breaking changes in v28. We will cut a release with updated dependencies. Guess this'll bump the version after to v0.27.
