Backend config is different than frontend

When you deploy the stack on Cloudformation, it creates the pool based on email but when you use the frontends from this repo it will use phone number which causes the entire repo to be inconsistent with each other

I have tried this with the 3 different frontends in this repo and all of them asked for phone number while cognito pool sets default to email
