Modify data in-memory in FFTR Tutorial (and others?)

Description

In the FFTR tutorial, we have them modify the data in the file and then create a new connection to rerun and compare the output.

If possible, it would make more sense to have them modify the data in-memory and rerun the model.
But this might be difficult with the current workflow. (Where would the output go?)

But, I think we should have something more detailed in the FFTR tutorial. So, the Tutorial 5 can serve as inspiration.
