Track onboarding progress in Posthog #1341

Feature Description
Make it possible for us to see the onboarding conversion by tracking
- How many users start onboarding
- How many users complete onboarding
- how many users drop off (elect to skip onboarding)
To track this, consider either
- giving each onboarding step its own route
- manually firing posthog events after each successful onboarding
Use Case
This info will allow us to assess how helpful our onboarding is.
